Banana Coconut Cake
Banana coconut cake is one among the my own expirimental recipe.The coconut part gives it that little extra taste that makes a whole lot of diffrences.Banana cake doesnt rice much probably because of the banana,but this Banaan coconut cake is moist,.
Ingredientsfor 4 servings
- 4 Banana
- 1 cup Coconut — grated
- 1/2 cup Sugar
- 3 Egg
- 1/4 tsp Cardamon powder
- 5 nos Cashew nuts
- 10 nos Raisins
- Oil for frying banana
Preparation
Step 1
Cut the banana into small pieces and fry until golden brown.
Step 2
Roast grated coconut,cashew nuts and raisins for 3-4 minutes and set aside.
Step 3
Whisk 3 eggs and sugar in a bowl.add fried banana into it and Stir everything together thoroughly.
Step 4
Heat 1 tbsp oil in a pressure cooker and pour the half portion of tge banana egg mixture into it.
Step 5
Add roasted coconut.
Step 6
Pour the remaining banana egg mixture and spread some roasted cashew nuts and raisins on its top.close the lid,remove the whistle and Continue cooking for 25 to 30 minutes in low flame.
Step 7
Banana coconut cake is ready to serve.
Tip
When working with jaggery, always melt and strain it first. Even the best quality jaggery has some grit that needs to be removed.
