- Unripe Plantains A few large ones, Paccha kkai
- Oil — for frying
Preparation
Step 1
Get plantains and cut them into half.
Step 2
Remove the skin.
Step 3
Heat oil and when it comes to a boil, slip in the sliced plantains directly into the oil using a chips slicer.
Step 4
Turn over until fully cooked and crisp.
Tip
Good shallots are the backbone of Kerala cooking. They should be small, pink-purple, and strong-smelling. Large onions can substitute, but the flavour will be different.
