Banana Cake - Kerala Style
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 4 servings
- 1 nos Banana Nentrakkaya
- 3 nos Egg
- 4 tbsp Sugar
- 2 nos Cardamom (Elakka)
- 25 g Cashewnuts
- 25 g Raisins
- 4 tbsp Ghee or Dalda
Preparation
Step 1
Cut banana into small triangular pieces.
Step 2
Beat eggs well with sugar and cardamom.
Step 3
Put ghee, fry cashew and raisins in a baking dish and set aside.
Step 4
Fry banana in the same ghee till it turns brown.
Step 5
Add the egg mixture to the fried banana with cashew and raisins.
Step 6
Stir once lightly to set the mix.
Step 7
Close the dish and cook in low flame for 5 - 6 minutes.
Step 8
When ready, turn it over on a serving plate.
Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
