Banana Bread Roll
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- 1 nos Ripe Plantain — finely sliced
- 8 nos Bread slices
- 1 Egg
- 1 tsp Sugar
- Cardamom powder pinch
- 1 tbsp Ghee
Preparation
Step 1
For preparing Banana Bread Roll, heat a pan and add ghee or oil. Fry the finely sliced plantain until both sides turn lightly browned.
Step 2
Flatten each bread slice using a rolling pin.
Step 3
Now take a flatten bread slice, stuff it with a piece of fried plantain.
Step 4
Roll it gently and seal the sides and edges with the egg mixture. Whisk 1 egg with sugar and cardamom powder for dipping the rolled bread before toasting.
Step 5
Dip each bread banana rolls in egg mixture.
Step 6
Heat ghee in a pan and toat all sides over a medium flame. When done, take it off the heat.
Step 7
Serve while still hot along with tea or coffee.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
