Banana Bajji
Deep-fried until the outside shatters at the first bite and the inside stays soft and flavourful. A tea-time favourite across Kerala, especially when the monsoon rain is hammering the roof.
Ingredientsfor 3 servings
- Banana : 1 no
- Flour : 1 tsp
- Rice flour : ½ tsp
- Soda : 1 pinch
- Asafoetida : 1 pinch
- Chilly powder : 1 tsp
- Salt, to taste
- Oil : to fry
Preparation
Step 1
Peel the skin and cut the banana into thin slices.
Step 2
Mix all the ingredients by adding little water.
Step 3

Dip the banana into the mixture and fry it In oil till both sides are fried.
Step 5
Serve while still hot.
Tip
Do not overcrowd the pan — fry in small batches to maintain the oil temperature. Crowding drops the heat and gives you greasy results.
