Bamboo Mutton Biriyani
A fragrant and mutton biriyani with tender mutton meat.Biriyani rice and Mutton mixed in spices stuffed into a piece of bamboo log and steam cook it for few minutes,result is the rich flavour of bamboo extracted by.
Ingredientsfor 6 servings
- For biriyani rice
- 1 kg Rice
- 3 tbsp Ghee
- 1 Small,grated Carrot
- 1 Small,sliced Onion
- 10 Cashew nuts
- 10 Raisins
- 3 tbsp Coriander leaves&mint leaves — chopped
- 1 tbsp Lemon juice
- Salt
- For Mutton masala
- 500 g Mutton
- 2 Big,sliced Onion
- 2 Tomato
Preparation
Step 1
Clean the mutton and pressure cook it with some salt and turmeric powder for 6-8 whistles or until the mutton is tender.
Step 2
Set a pan over medium heat and pour in the oil and add crushed ginger,garlic and stir for a few seconds.then add onion.
Step 3
Add salt and cook onions till it becomes brown.
Step 4
Add crushed green chillies,tomato and stir.when tomatoes turn soft add garam masala and pepper powder.
Step 5
After 2-3 minutes add cooked mutton.chopped coriander leaves and mint leaves.Stir everything together thoroughly and take it off the heat after 2-3 minutes.
Step 6
Heat ghee in a pressure cooker,add cleaned rice and enough boiled water,salt and lemon juice.cook the rice for one whistle.
Step 7
Fry some onion,cashew nuts and raisins separately in oil until golden brown.mix it with some grated carrot and chopped coriander leaves and mint leaves.sprinkle some garam masala init and mix it with the cooked rice.
Step 8
Now we are going to layer the briyani/dhum the biriyani.Take the bamboo log make the first layer with biriyani rice.
Step 9
Add mutton masala on top of the rice and top the layer with rice(The top layer should be of rice)cover the bamboo logs top with an empty coconut shell.heat a pressure cooker/puttu kudam with 3 cups of water and Bring to a gentle boil.place the bamboo log on top of it and steam Continue cooking for 5 to 7 minutes.
Step 10
Remove it to plate and the Delicious Bamboo Mutton Biriyani is ready.
Tip
If the gravy reduces too fast before the meat is tender, add hot water in small amounts. Cold water toughens the meat.
