Baked Fish Easy
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 4 servings
- 2 - Tilapia fillet
- 2 cup Red onions — chopped
- 2 nos Green chillies — chopped
- 2 nos Ripe tomatoes finely chopped, large
- 1 tsp Coriander powder
- 1 - Chilly powder
- Pepper powder, to taste
- Lemon juice, to taste
- Salt, to taste
- 1 - Olive oil
- Garlic ginger paste - 1/2 tsp
- 2 tbsp Coriander leaves — chopped
Preparation
Step 1
Clean and place the Tilapia fillet in one layer in a baking dish.
Step 2
Season with salt and pepper powder.
Step 3
Heat the oil in a saucepan.
Step 4
Cook the onions and green chillies, until they turn translucent.
Step 5
Add coriander powder, chilly powder, a pinch of pepper powder and ginger-garlic paste and sauté, until the oil separates.
Step 6
Add the tomatoes and give it a good stir on low fire, until the mixture is soft and pulpy.
Step 7
Take it off the heat.
Step 8
Add lemon juice and salt.
Step 9
Get the mixture in the saucepan and spread it evenly over the fish so as to cover the fish well.
Step 10
Bake the fish in an oven at about 300 degrees for about 20 minutes or just until the fish can be flaked with a butter knife.
Step 11
Goes well with vegetable pulao or bread/rotis or just grilled vegetables.
