Bachelor Masala Fried Rice
Kerala-style flavoured rice — each grain separate, gently spiced, and cooked until it is just tender. A squeeze of lime and a handful of fried cashews finish it off.
Ingredientsfor 4 servings
- 2 cup Frozen vegetables mix Green peas, Corn, Carrot, Beans
- 2 nos Onions
- 4 tsp Masala powder
- 2 tsp Chilly powder
- 1 tsp Salt
- 3 cup Basmati rice
- 4 tsp Tomato sauce
- 4 tsp Soya sauce
- Ajinomotto A small pinch — optional
- 1 cup Oil
Preparation
Step 1
Heat half cup of oil in a pan.
Step 2
Add chopped onions and stir, till red.
Step 3
Add the vegetable mix.
Step 4
Put this mix in warm water for some time to defrost.
Step 5
Add masala powder, chilly powder and salt and give it a good stir, till vegetables are cooked.
Step 6
Transfer all the contents in the pan into another vessel.
Step 7
Heat the remaining oil in the same pan(without washing the pan).
Step 8
Add basmati rice and stir fry, till all the rice changes colour.
Step 9
Add water(1 cup of rice : 1.5 cups of water), tomato sauce, soy sauce and salt.
Step 10
Add a small pinch of ajinomotto, if desired.
Step 11
Cook, till rice is done and water is dried up.
Step 12
Add the cooked vegetables to this and Stir everything together thoroughly.
Step 13
Buy the frozen vegetables mix bag which has green peas, corn, carrot and beans in one bag from any US grocery store.
Tip
For each cup of rice, use slightly less water than usual when adding other liquid ingredients like coconut milk or stock.
