Bachelor Baaji
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- 3 cup Frozen vegetables mix Green peas, Corn, Carrot, Beans
- 2 nos Potatoes
- 1 nos Onion
- 4 nos Green chillies
- 1/4 tsp Turmeric powder
- 1 tsp Salt
- Oil, to taste
Preparation
Step 1
Pressure cook potatoes.
Step 2
Set a pan over medium heat and pour in the oil.
Step 3
Add chopped onions and green chillies and stir fry them.
Step 4
Add turmeric powder and salt.
Step 5
Add all vegetables and water as needed.
Step 6
If you want it dry, do not add water.
Step 7
Goes well with rice or rotis.
Step 8
Following is the easiest way of boiling potatoes. Pressure cook whole unpeeled, unwashed potatos with enough water. After boiling, remove all remaining water from the cooker. Fill cooker with cold water. Keep it for two minutes to cool down. Now peeling is as easy as unwrapping a toffee wrapper!

*Buy the frozen vegetables mix bag which has green peas, corn and carrot in one bag from any US grocery store.
Tip
Grinding spices fresh makes a noticeable difference. Pre-ground powders lose their punch within weeks. Buy whole, toast lightly, and grind as you need.
