Ayala Thoran
Simple, honest, and on every Kerala lunch plate — mixed thoran is coconut oil, grated coconut, and a handful of spices working quietly together. No fuss, just good food.
Ingredientsfor 3 servings
- 3 nos Ayala big
- 2 nos Gambooge kudampuli
- 1/2 tsp Turmeric powder
- 1/2 tsp Chilly powder
- Salt, to taste
- 2 nos Onion — chopped
- 2 tsp Chilly powder
- 1/2 tsp Turmeric powder
- 2 nos Dry red chillies
- 1/2 tsp Mustard
- 1/2 tsp Urad daal parippu (Uzhunnu)
- Curry leaves, a few
Preparation
Step 1
For preparing ayala thoran, cook fish with turmeric powder, chilly powder, gambooge, little salt and required water.
Step 2
Crush the ingredients for grinding.
Step 3
Cook mustard, chillies and urad daal in oil.
Step 4
Add red onion and curry leaves.
Step 5
Add turmeric and chilly powder. Add the crushed coconut mixture and cook well.
Step 6
Add the minced fish and fry well.
Step 7
Ayala thoran is ready.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
