Ayala Meen Fry | Mackerel Fish Fry
A fried delicacy very commonly ed with noon day meals in Kerala Cuisine. The crispy, crusty layered Ayala Meen Fry is a favorite with all.
Ingredientsfor 2 servings
- 1 large Ayala Mackerel
- 1/2 tsp Turmeric powder
- 1½ tsp Kashmiri Chilly powder
- Salt, to taste
- 1/2 tsp Ginger — crushed
- 1/2 tsp Garlic — crushed
- Curry leaves, to taste
- Oil, to taste
- Water A little
Preparation
Step 1
For preparing the fried fish delicacy, mix together turmeric powder, chilly powder, ginger, garlic, salt and curry leaves and prepare a paste with little water.
Step 2
Marinate the fish with the above paste for around 30 minutes.
Step 3
Heat up a pan. Add 2 tbsp of oil in it.
Step 4
Place the fish over the hot oil and cover it.
Step 5
When one side is done, turn and cook the other side.
Step 6
When done, keep the fried fish on a kitchen napkin.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
