Aviyal - Brahmin Special
Vegetables cooked with ground coconut and other ingredients.
Ingredientsfor 8 servings
- 100 g White gourd (Kumbalanga)
- 100 g Pumpkin Mathanga
- 100 g Elephant yam Chena
- 1 nos Raw banana
- 1 nos Potato
- 2 nos Drumstick Muringakka
- 1 nos Carrot
- 11/2 cup Coconut — grated
- 6 nos Green chillies
- 1 tsp Turmeric powder
- 1/2 cup Slight soured curd
- 1 tsp Red chilly powder
- 2 tbsp Coconut oil
- Salt, to taste
Preparation
Step 1
For preparing aviyal - brahmin special, cut and wash vegetables from white gourd to carrot. Please cut the vegetables into long and thin pieces. Boil this in cooker with sufficient quantity of water. Add turmeric powder, red chilly powder and salt.
Step 2
Grind the grated coconut and green chillies with water and mix the ground item with the boiled vegetables and cook for a few minutes.
Step 3
Add curd to this mixture and when foam comes immediately stop cooking and care should be taken not to boil after adding curd.
Step 4
Add curry leaves and coconut oil to the mixture.
Step 5
Aviyal - brahmin special recipe, is ready.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
