Avil (Rice Flakes) Laddu
Old-fashioned Kerala sweetmaking — no shortcuts, no substitutes. Jaggery, ghee, and coconut come together through slow cooking and patience into something far greater than the sum of their parts.
Ingredientsfor 4 servings
- 250 g Avil Rice Flakes
- Ashew nuts - 10 gms
- 10 g Dried Grapes
- 5 nos Cardomom Clean the Cardomoms and — grind them without water and keep the powder separately
- 2 cup Coconut — grated
- 8 piece Jaggery — grind the jaggery in a mixer without water and keep the powder separately
Preparation
Step 1
Roast the Avil (Rice flakes) in medium flame, grind it in a mixer (without water) and keep the powder separately.
Step 2
Get the Grated Coconut, Avil (Rice flakes) Powder, Cardomom Powder and Jaggery powder in a big vessel and mix them together and make the powders mix very smooth (this will help to get the Laddus correct shape).
Step 3
Get small portions of the powders mix in hand and roll them to balls and garnish them (the laddus) with Cashew-nuts and dried Grapes. Avil (Rice flakes) Laddus are ready. All people in the family can eat these delicious, naturally prepared Laddus to their satisfaction.
Tip
When working with jaggery, always melt and strain it first. Even the best quality jaggery has some grit that needs to be removed.
