Aval Payasam With Ellu
The kind of payasam that appears at every Sadya and disappears first from the banana leaf. Slow-reduced milk, a touch of sweetness, and the warmth of cardamom — simple in concept, extraordinary in taste.
Ingredientsfor 3 servings
- 50 g Aval rice flakes Beaten rice
- 75 g Jaggery Sarkara
- 25 g Sesame seeds Ellu
- 2 tbsp Ghee
- 1/2 litre Milk
- Cashew nuts, to taste
- Raisins, as needed
- Cardamom powder, to taste
Preparation
Step 1
Add little water to jaggery and allow it to melt. Strain and set aside.
Step 2
Heat ghee in a pan and fry the cashew nuts and raisins. Remove the nuts and raisins and set aside.
Step 3
Add sesame seeds to the ghee and fry.
Step 4
Add aval rice flakes and fry for sometime.
Step 5
Pour milk and some water. Stir in cardamom powder. Add melted jaggery and cook in low fire.
Step 6
When the aval is done, remove from fire and garnish with fried cashew nuts and raisins.
Step 7
Aval payasam with ellu, a south indian recipe, is ready. Serve hot.
Tip
The payasam will thicken significantly as it cools. Stop cooking when it is still slightly thinner than your target consistency.
