Ingredientsfor 3 servings
- 1 cup Beaten rice
- 3/4 cup Sugar
- 21/2 cup Milk
- 1/4 tsp Cardamom powder
- 10 Cashew nuts
- 10 Raisins
- Salt pinch
Preparation
Step 1
Heat ghee in a pan or uruli and fry the cashew and raisins until lightly browned.
Step 2
Add aval/beaten rice in the remaining ghee.
Step 3
Roast the aval until crisp.
Step 4
Once the aval begins to smell good,pour milk and cook on a medium heat.
Step 5
Add sugar,cardamom powder when the payasam stars thickens.
Step 6
Stir and cook on a medium heat until the payasam turns thick.Add cashew nuts, raisins and take it off the heat.
Step 7
Serve aval payasam warm or cold.
Tip
For each cup of rice, use slightly less water than usual when adding other liquid ingredients like coconut milk or stock.
