Ariyunda - Traditional
Boiled rice is mixed with coconut and jaggery to prepare balls.
Ingredientsfor 3 servings
- 1 cup Boiled rice puzhungalari
- 1 cup Jaggery Vellam
- 1 cup Coconut — grated
Preparation
Step 1
For preparing ariyunda, wash the boiled rice(puzhungalari) well and fry it in a china dish in low heat.
Step 2
When it starts to pop, bring it from the flame and let it cool.
Step 3
Grind in a mixer grinder well.
Step 4
Add jaggery powder and grated coconut to the above rice powder and mix it well.
Step 5
Then make small balls out of the above mixture.
Step 6
Ariyunda is ready.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
