Amarakka Upperi | Broad Beans Stir Fry
Finely chopped beans stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 4 servings
- 250 g Amarakka(Broad Beans
- 1/4 cup Coconut — grated
- Shallots/Onion, as needed
- 2 nos Green Chilli
- 2 tsp Red Chilli Powder
- Curry leaves, a few
- 2 tsp Oil
- Salt, as needed
Preparation
Step 1
Clean and cut the Amarakka into small pieces and set aside.
Step 2
Peel shallots/onion and cut them into medium sized pieces. Clean and cut the green chilli also(preferably in vertical) and keep them separately.
Step 3
Heat the oil in a cheenachatti/frying pan and add shallots/onion pieces, green chilli pieces and curry leaves into this hot oil and stir it well.
Step 4
When colour of this mix turns into golden/brown, add Amarakka pieces and required quantity of Salt and Red Chilli powder and stir it well. Cover the frying Pan with a plate/cover and cook the mix properly in low flame without adding water.
Step 5
After about 10 – 15 minutes, check whether the mix is cooked properly and then add grated coconut into this mix. Amarkka/Broad Beans Upperi is ready.
Step 6
This Amarakka Upperi is best served with hot steamed rice for noon day meals. The dish can also be served with hot chappathis.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
