Aloo Wonder
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 3 servings
- 2 nos Potato cubed, medium
- 3 nos Carrot cubed, medium
- 2 nos Onion — finely chopped
- 2 nos Tomato
- 1 nos Capsicum small one — cubed
- 1 Green chili small one
- 1/2 tsp Ginger garlic paste
- 1/4 tsp Garam masala home made
- 1/2 tsp Aniseed — powdered
- 1 nos Maggie magic cube chicken cube can also be used
- 21/2 tsp Coriander powder
- 1/4-1/2 Chilli powder
- 1/4 tsp Turmeric powder
- Salt as rqrd
- Corainder leaves — chopped
Preparation
Step 1
Heat oil (small quantity) in a pressure cooker.
Step 2
To this add chopped onions and cook for a while.
Step 3
Add salt,garam masala and aniseed pwdr.sauté.
Step 4
Add ginger garlic paste.cook until the fresh smell goes.
Step 5
Add tomatoes and green chilli and cook it, stirring.
Step 6
Next, add all the curry powders and very little water and cook till the fresh smell goes.
Step 7
To this mix add potatoes carrots and capsicum and coat all the masalas evenly. Then add crushed maggie cube( or chicken cube) and chopped coriander leaves.
Step 8
Add water levelling the mixture.Close it to cook.
Step 9
Simmer it after the first whistle and wait for 2 more whistles.
Step 10
After it is done,mash the curry partially leaving some cubes of potatoes and carrots.
Step 11
Good with appams and dosas.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
