Aloo Gobi / Cauliflower Potato Curry
Aloo gobi / Cauliflower Potato Curry is a popular Indian dish in which potatoes and cauliflower are cooked with onions, tomatoes and spices. This dish can be made in several ways, you can make it with only onions or only tomatoes or use no onion-tomato at all.
Ingredientsfor 4 servings
- Size cauliflower/
- Gobi chopped into medium florets : 1 no
- Potatoes : 2 nos
- Onion finely chopped : 1 no
- Tomatoes chopped : 2 no
- Ginger finely chopped : ½ tsp
- 3 nos Green chilies slit length wise : 2
- Turmeric powder : ½ tsp
- Coriander & cumin powder : ½ tsp
- Red chili powder : ½ tsp
- Garam masala powder : ½ tsp
- Whole cumin seeds : 1 tsp
- Oil : 2 tsp
- Coriander leaves : for garnish
- Salt, to taste
Preparation
Step 1
Cut the cauliflower/gobi into medium florets and cube the potatoes.
Step 2
Keep the green leaf part of the stem of the cauliflower/gobi as well.
Step 3
Set a pan over medium heat and pour in the oil/kadai and add the whole cumin seeds / jeera.
Step 4
When the jeera turns brown add the chopped onions and slit green chilies and Continue cooking for 3 to 4 minutes. Add the chopped ginger and Stir everything together thoroughly.
Step 5
Add the chopped tomatoes and all the dry masala powders and salt and cover the pan and cook till the oil separates from the masala.
Step 6
Add the cut aloo and gobi and ½ cup water and Put the lid on and cook for 15-20 minutes till done.
Step 7
Garnish with coriander and serve hot.
Tip
For a thicker gravy, cook uncovered on medium heat for the last few minutes. For a thinner consistency, add a splash of warm water.
