Aloo Bhaaji

Ingredientsfor 4 servings
- 5 nos Potatoes — chopped
- 2 nos Onion large
- 2 nos Green chillies — slit
- 1/4 inch Ginger — chopped
- Turmeric a pinch
- 1/2 tsp Mustard seeds
- Curry leaves, a few
- 2 nos Red chillies whole
- Coriander leaves, a few
- 1 nos Tomato large
- 1/2 tsp Cumin seeds/Jeera
- Salt, to taste
Preparation
Step 1
In the pressure cooker add cut potatoes, onion, cut tomato, ginger, and green chillies.
Step 2
Add little water, salt, turmeric powder and pressure Let it cook for 5 minutes.
Step 3
Open cooker lid and with a spoon mash the potato a little so that some are mashed and some left as such.
Step 4
Set a pan over medium heat and pour in the oil.
Step 5
Let the mustard seeds crackle, jeera, curry leaves, red whole chillies, and again one sliced onion.
Step 6
Fry and pour over the potato mixture.
Step 7
Add coriander leaves.
Tip
