A Sweet Delicious Apple Pudding
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 3 servings
- Apple : 5 (peeled,cored, sliced
- Flour : 1 2/3 cup
- Baking powder : 2 tsp
- Caster sugar : 250 gm
- Milk : 200 ml
- Butter : 150 gm unsalted, melted
- Eggs : 2 beaten
- Brown sugar : 1 cup
- Golden syrup : 1/2 cup
Preparation
Step 1
Preheat the oven to 180 degree. Place apples in the prepared dish.
Step 2
Sift flour and baking powder into the bowl of an electric mixer, add caster sugar, milk, butter and egg. Then beat until pale. Spread over the apples.
Step 3
Place brown sugar, golden syrup and 300 ml water in a saucepan.
Step 4
Stir over medium heat until sugar dissolves then bring to the boil without stirring.
Step 5
Pour over the pudding batter then bake for 30-35 minutes or until the top is golden.

Dust with icing sugar and serve with cream.
Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
