Yummy Egg Burji
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 2 servings
- 1/2 cup Onion chopped, big
- 1 nos Red chilly( ) whole (Kollamulaku)
- Salt, to taste
- Oil, to taste
- 2 tbsp Above chutney
- 2 nos Eggs
- Salt, to taste
- Pepper, to taste
- Oil, to taste
Preparation
Step 1
For preparing Egg Burji, first Heat the oil in a pan or kadai.
Step 2
Add the whole chillies and the onions and fry, till the onions become glazy.
Step 3
Take it off the heat. and let it cool.
Step 4
After it has cooled, add salt and grind to a fine paste in the grinder for a few minutes.
Step 5
Make sure the mixture is cool before grinding in the grinder. Otherwise, it could spoil the grinder.
Step 6
Get the onion and chilly mixture from the grinder and set aside.
Step 7
This is a very Chutney by itself and you can serve with dosa or idli.
Step 8
Get eggs and break into a bowl.
Step 9
Add salt and pepper.
Step 10
Add 2 tbsp of the above onion mixture and beat it well.
Step 11
Pour oil into a pan and heat it or a kadai.
Step 12
Add the egg mixture and scramble it with a fork.
Step 13
When done, take it off the heat.
Step 14
Serve Egg Burji hot with chappathis.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
