Quick - Fix Doughnuts
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- All purpose flour : 2 cups
- Sugar : ½ cup
- Butter : 5 tsp
- Egg : 2 nos
- Baking powder : 2 tsp
- Salt : a pinch
- Vanilla essence : 1 drop
- 2 tsp Milk : 1 If the dough is too dry
Preparation
Step 1
Sieve the flour and baking powder into a bowl. Add the salt followed by the butter.
Step 2
Using your hands, rub the butter into the flour until crumbs form. Add the sugar to this and Stir everything together thoroughly.
Step 3
Add 2 eggs, vanilla essence and a pinch of salt. Make dough.
Step 4
Divide the dough into two to make rolling out easier, roll out to quarter inch thickness and start cutting your doughnuts.
Step 5
If you want them crispy, roll the dough out thinner than quarter inch and cut out the doughnuts.
Step 6
Keep doing this until all the doughnuts have been formed.
Step 7
Fry in hot oil them.
Step 8
Heat ½ cups of milk and dissolve 1 cup of icing sugar to this.
Step 9
When it comes to boil and becomes thick enough, turn off the heat, and pour over the doughnuts using a spoon, or you can dip them in the liquid.
Step 10
Keep to cool and transfer to containers.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
