Yam Masala Curry
A deeply satisfying yam masala curry simmered slowly with freshly ground spices and coconut. The kind of gravy that thickens as it rests and rewards patience with layered, rounded flavour.
Ingredientsfor 4 servings
- 1/2 kg Yam — cut into cubes
- 6 nos Red chillies (Kollamulaku)
- 1 tbsp Coriander seeds
- 1 cup Coconut — grated
- 1 sprig Curry leaves
- 1/5 tsp Turmeric powder
- 4 nos Cloves (Grambu)
- 2 nos Cinnamon sticks of 1" size (Karugapatta)
- 1 nos Green chilly — slit
- Salt, to taste
- 2 nos Onions
- 1 nos Tomato large
- 2 sprig Coriander leaves
- 3 tsp Oil
Preparation
Step 1
Cook yam in water along with turmeric powder, a little bit of salt and green chilly. Set aside.
Step 2
Pour oil into a pan and heat it.
Step 3
Fry the onions, till they goes golden brown.
Step 4
Add tomatoes and a small pinch of salt.
Step 5
In the mean time, grind the cloves and cinnamon bark to a fine powder and set aside.
Step 6
Heat up another pan.
Step 7
Add coconut, coriander seeds, red chillies and a pinch of turmeric powder.
Step 8
Stir continuously, till the smell of masala comes.
Step 9
Allow it to cool.
Step 10
Grind the same into a paste with some water taken from the vessel in which yam was cooked.
Step 11
Get a larger vessel and add the cooked yam(with water), coconut mixture, onion-tomato mixture and the clove-cinnamon powder.
Step 12
Add coriander leaves and salt and Stir everything together thoroughly.
Step 13
Allow it to boil.
Tip
Let the curry rest for at least 15 minutes after cooking — the flavours deepen as it sits. Reheated curry almost always tastes better than fresh.
