White Pumpkin Curry Kerala Style | Kumbalanga Curry
A classic Kerala style curry prepared with the flavors of Coconut and green chillies. This curry is prepared often in every house. White Pumpkin is a watery vegetable which has lots of fiber in it.
Ingredientsfor 3 servings
- 1/2 kg White Pumpkin (Kumbalanga)
- 1 cup Coconut — grated
- 3 nos Green chillies
- 3 nos Small onions
- 1/4 tsp Turmeric powder
- 1 tsp Mustard seeds
- 2 sprig Curry leaves
- 3 tsp Oil
- Salt, to taste
Preparation
Step 1
For preparing the healthy dish, wash the pumpkin well and cut into small pieces. The shapes should be uniform.
Step 2
Grind the coconut, small onions, turmeric powder and green chillies into a coarse form. Do not make it a paste.
Step 3
Mix this masala with the pumpkin pieces.
Step 4
Season with salt. Stir everything together thoroughly.
Step 5
Pour oil into a pan and heat it.
Step 6
Let the mustard seeds crackle and cook curry leaves.
Step 7
Add the pumpkin mixture.
Step 8
Give it a good stir and cook till the mixture becomes dry. Cook in low flame so the dish gets cooked well. White Pumpkin Curry Kerala Style is ready. This is a delicious dish that goes well with hot rice.
Tip
For a thicker gravy, cook uncovered on medium heat for the last few minutes. For a thinner consistency, add a splash of warm water.
