Vishu Kanji - Vishu Special
A tasty porridge made with coconut milk, rice and other ingredients.
Ingredientsfor 4 servings
- 1/2 cup Raw Rice (Pachari)
- 1/2 cup Parboiled Rice Puzhangalari
- 1/2 cup White beans
- 3 cup Coconut milk
- 1/2 cup Coconut — grated
- Salt, to taste
Preparation
Step 1
For preparing vishu kanji, first dry roast the white beans and remove the skin.
Step 2
In a large pot, boil both the rice and white beans with required water and salt.
Step 3
When the rice is done, add the coconut milk and heat.
Step 4
When the bubble starts to come from the sides, immediately take it off the heat.
Step 5
Pour the porridge in serving plate and decorate with grated coconut on top of it.
Step 6
Vishu kanji, a Vishu special recipe is ready.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
