Vendakka (Ladies Finger) Pachadi
A traditional Kerala Sadya dish that carries the flavours of coconut, yogurt, and carefully balanced spices. Each component of the feast has its role, and this one brings a quiet, essential balance to the banana leaf.
Ingredientsfor 4 servings
- 2 Lbs Ladies Finger — sliced
- 4 nos Green chillies
- 1 nos Onion — sliced
- Ginger
- Garlic
- Curd
- Mustard
- Salt
- Turmeric powder
Preparation
Step 1
Pour oil into a pan and heat it and cook sliced onion.
Step 2
Add green chilles, ginger garlic paste, salt and turmeric powder.
Step 3
Add the sliced ladies finger and let it go for 15 - 20 minutes.
Step 4
Beat some curd and mix it well with water.
Step 5
Add this beaten curd to cooked ladies finger. :- Do not heat it!
Step 6
Allow to crackle few more mustard seeds in a pan along with red chillies and curry leaves and add to the pachadi.
Step 7
Vendakka (Ladies Finger) Pachadi is ready! :- Serve the Vendakka (Ladies Finger) Pachadi for rice! Thats my style of making pachadi!
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
