Vendakka Fry | Ladies Finger Fry
A spicy, tasty and crispy vegetarian dish that you can relish with your noon day meals especially with rice and dal. This is a popular and a favorite dish in Kerala Cuisine. one of the best side dishes you can make with this exotic vegetable.
Ingredientsfor 4 servings
- 6 nos Vendakka Ladies finger
- 2 Tspns Rava Suji
- Salt, to taste
- 1 Tspn Aamchur Dried Mango Powder
- 2 Tspns Red chilli powder
- ½ Tspn Turmeric powder
- ½ Tspn Asafoetida powder
- 1 Tspn Ginger Paste
- 1 Tspn Garlic paste
- 2 – Coconut/Refined Oil
Preparation
Step 1
Wash the Vendakka (Ladies fingers), cut and remove both up and down sides then cut them vertically.
Step 2
Add Red Chilli powder, Rava (Suji), Aamchur powder, Turmeric powder, Asafoetida powder, Ginger and Garlic paste and Salt into the vertically cut Vendakka pieces and mix them together. Some masala can also fill inside the Vendakka pieces and keep them aside for about 5 – 10 minutes.
Step 3
Heat the oil in a Frying pan/Cheenachatti, place the masala coated Vendakka pieces in the Frying pan/Cheenachatti and cover it with a lid/plate and allow to cook the pieces on steam.
Step 4
When one side of the Vendakka (Ladies finger) pieces are cooked well, turn them to other side and allow to cook that side also.
Step 5
The delicious fry is ready.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
