Vegetable Patties
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 7 servings
- 225 g All purpose flour Maida
- Salt A pinch
- 225 g Butter salted
- 150 ml Ice cold water approx
- 1 tsp Lemon juice
- Milk, as needed — optional
- Dry cooked vegetables or potatoes
Preparation
Step 1
Sieve maida and salt together in a mixing bowl.
Step 2
Rub in 25 gms of butter and mix in water and lemon juice.
Step 3
Knead them together to make a elastic dough on a marble, granite or stone surface.
Step 4
Cover it and refrigerate.
Step 5
Beat the butter till soft and shape it into a thick block of about 1/3".
Step 6
Cover it and keep it in fridge to set. 7)Roll out the dough and place the butter slab in the middle and fold the dough over it.
Step 7
Keep it upside down and roll it again into a rectangular shape. Fold it into layers.
Step 8
Wrap it in a polythene cover and keep it in the fridge for 2 hours. 10)Repeat the rolling and folding process four times resting the dough two hours in the fridge in between every time. 11)Cut into squares of 5"x5" trimming the sides so that the layers show up. 12)Keep 1 tbsp of prepared vegetables and fold it diagonally thus giving the patties triangular shape.
Step 9
Dampen the sides, press them slightly and seal them. 14)Brush the top of the patties with milk(optional).
Step 10
Bake them in a hot oven at 200ªC for about 50-60 minutes or to a golden brown color. :- Makes about 15-20 patties.
Tip
Grinding spices fresh makes a noticeable difference. Pre-ground powders lose their punch within weeks. Buy whole, toast lightly, and grind as you need.
