Vegetable Fried Rice At Home
Kerala-style flavoured rice — each grain separate, gently spiced, and cooked until it is just tender. A squeeze of lime and a handful of fried cashews finish it off.
Ingredientsfor 4 servings
- Rice : 3 cup
- French beans : 100 gm — chopped
- Carrots cut in thin strips : 2 nos
- 3 nos Spring onions with greens cut in rings : 2
- 4 Cloves Garlic minced : 3
- Light soya sauce : 2 tsp
- Freshly ground black pepper : ¼ tsp
- Ajinomoto, a few
- Salt, to taste
- Sesame oil : 3 tsp
Preparation
Step 1
Wash and boil the rice and set aside to cool. The rice should be slightly under cooked.
Step 2
Set a pan over medium heat and pour in the oil. When the oil is hot add minced garlic and fry till it goes golden brown.
Step 3
Add french beans and carrots and stir fry for a minute.
Step 4
Add the spring onions and greens and stir fry.
Step 5
Add salt, pepper and ajinomoto to the vegetables and Stir everything together thoroughly.
Step 6
Add cooked rice and light soya sauce and Stir everything together thoroughly. Serve hot.
Tip
For each cup of rice, use slightly less water than usual when adding other liquid ingredients like coconut milk or stock.
