Vegetable Fried Rice
A one-pot rice dish that brings together grains, spices, and vegetables or meat in a single satisfying meal. The rice absorbs every flavour in the pot and comes out fragrant, colourful, and complete.
Ingredientsfor 6 servings
- 2 cup Basmati rice
- 3 tbsp Ghee/Oil
- 2 piece Cinnamon
- 4 nos Cardamom
- 4 nos Cloves
- 2 piece Bay leaves
- 2 nos Onion — sliced
- 100 g Beans — chopped
- 100 g Carrot — chopped
- 100 g Green Peas
- 1 tsp Garam masala
- 1/2 tsp Pepper powder
- Salt As rqrd
Preparation
Step 1
Wash and cook basmati rice (by adding little salt) till it is 80% done.Drain the rice and set aside.
Step 2
Heat ghee/oil in a large pan and allow to crackle cinnamon, cardamom, cloves and bay leaves.Add sliced onion and cook until it is golden brown.
Step 3
Mix chopped vegetables along with some salt and cook until it is cooked :-(keep it in a low or medium flame while sauting).
Step 4
Add cooked and cooled rice, garam masala and pepper powder and Stir everything together thoroughly to get a uniform mixing.
Step 5
Keep it in a low flame for 15 minutes and remove from fire.
Step 6
Fried rice is ready to serve.
Step 7
In this fried rice, you can add more vegetables of your choice.And If you want to make this a non veg fried rice, you can add scrambled egg(or you can add beaten egg to the cooked vegetables and scramble it) or cooked mince chicken / prawns (cook chicken/prawns by adding little salt, pepper powder and garam masala) or any other non veg according to your taste and creativity.
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
