Veg Fruit Delight
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 3 servings
- 1/2 cup Carrot — grated
- 1/2 cup Pineapple — finely chopped
- 750 g Sugar
- 4 cup Coconut milk
- 2 cup Corn flour paste
- 1 cup Tapioca cooked and — mashed
- Dry fruits, to taste
- 250 g Ghee
Preparation
Step 1
For preparing veg fruit delight, fry carrot and pineapple in ghee.
Step 2
Next, add sugar and coconut milk. Sir well.
Step 3
Drop in corn flour paste and tapioca. Stir continuously till it becomes thick.
Step 4
Convert it into a serving bowl and garnish with dry fruits.
Step 5
Veg-fruit delight is ready. Serve chilled.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
