Vazhuthananga Mezhukkupuratti | Brinjal Stir Fry
Simple, honest, and on every Kerala lunch plate — brinjal thoran is coconut oil, grated coconut, and a handful of spices working quietly together. No fuss, just good food.
Ingredientsfor 4 servings
- 6 nos Brinjal — sliced
- 1 tsp Mustard seeds
- 100 g Shallots (kunjulli)
- Curry leaves, a few
- 10 nos Dry Red Chillies
- 3/4 tsp Turmeric powder
- Coconut oil, to taste
Preparation
Step 1
For preparing Brinjal Stir Fry, first heat some coconut oil in a pan. let the mustard seeds crackle and add curry leaves.
Step 2
Coarsely grind shallots, chillies, salt and turmeric.
Step 3
Add it to the pan and fry well.
Step 4
Add sliced brinjal and fry well. Cover with a lid and cook in low flame adding some water if required.
Step 5
Remove the lid when done followed by a few more oil and fry well.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
