Vayakkathil Appam
A evening snack recipe usually prepared with mysore pazham but now it is jackfruit season and I substitite it with jackfruit.Fresh jackfruit adds an extra sweetness to the Appam.They are mainly made with rice,jaggery.
Ingredientsfor 6 servings
- 2 cup Raw rice soak overnight
- 1 cup Jackfruit puree
- 11/2 cup Jaggery
- 1/2 cup Maida
- Salt pinch
- Water, to taste
Preparation
Step 1
Powder the rice using a blender,it should powder too fine.
Step 2
Remove the jackfruit seeds and grind it to a fine paste.
Step 3
Dissolve the jaggery in half cup of water.
Step 4
In a bowl,add rice powder,maida,jackfruit puree,melted jaggery,salt and water.Mix it well,it should not be too runny.
Step 5
Heat a pan,pour some batter and fry it until golden brown.
Step 6
Vayakkathil appam is ready to serve.
Tip
A well-seasoned appachatti is worth the investment. The appam should release from the pan without any resistance.
