Vattayappam - Traditional Snack
Lacy edges, spongy centre — appam is fermented rice batter swirled in a curved pan until it forms a bowl-shaped pancake. The slight tang from fermentation pairs perfectly with a coconut stew or egg curry.
Ingredientsfor 5 servings
- 2 cup Rice flour Ari podi
- 2 cup Coconut — grated
- 1/2 cup Sugar
- 2 tbsp Semolina Rava/Sooji
- 1/2 tsp Yeast
- 1/2 tsp Sugar
- Raisins(Onakkamunthiri — for garnishing
- 4 nos Cardamom (Elakka)
- Salt, to taste
Preparation
Step 1
Cook rava with 2 glasses of water until softened & loose.
Step 2
Let it cool.
Step 3
Add 1/4 glass of lukewarm water to yeast followed by 1/2 tsp of sugar.
Step 4
Allow it to rise.
Step 5
Grind the coconut with enough water & set aside.
Step 6
Get 2 cups rice flour in a vessel, add rava & Stir everything together thoroughly.
Step 7
Add yeast & Stir everything together thoroughly.
Step 8
Add ground coconut & Stir everything together thoroughly.
Step 9
Crush the cardamom and add it to the batter.
Step 10
Make sure that the batter is not too loose. It should have a medium consistency.
Step 11
Keep it for 3 hrs.
Step 12
After 3 hrs, add 1/2 cup of sugar or more if required, followed by salt & give it a good stir.
Step 13
Apply a liitle ghee/oil in a cake tin & pour the batter into it.
Step 14
Put some raisins on top.
Step 15
Steam it for 20 - 25 minutes.
Step 16
You can also use idli plates to steam it.

Tip
A well-seasoned appachatti is worth the investment. The appam should release from the pan without any resistance.
