Uri Dosa
Crispy on the edges, soft in the middle — this uri dosa is a breakfast staple across Kerala. The batter comes together quickly and the dosa cooks in under a minute on a hot tawa.
Ingredientsfor 3 servings
- Egg : 1 no
- Coconut milk : 1 cup
- Rice flour : 1 cup
- Oil : 1 tsp
- Sugar : 1 tsp
- Salt : pinch
Preparation
Step 1
Get the first milk of coconut and break an egg with yolk and set aside.
Step 2
Mix the coconut milk, egg yolk, sugar and salt and beat well.
Step 3
Add rice flour little by little and Stir everything together thoroughly.
Step 4
The consistency should be more fluid type than usual dosa batter.
Step 5
Now apply the batter on the dosa pan and close it with lid, it should be cooked in slow flame and one side only.
Step 6
Serve while still hot.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
