Unnakkaya
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- 2 nos Indian bananas half ripe
- 2 nos Eggs
- 2 tbsp Sugar
- 1 tbsp Raisins
- 1 tbsp Cashews — chopped
- 2 tsp Ghee
- Oil to fry
- Cardamom powder a, a few
Preparation
Step 1
Cook Bananas in boiling water till the peel separates slightly from the fruit.
Step 2
Take it off the heat. and Strain. 3)Remove the peel and grind the bananas to a smooth dough without adding any water and set aside.
Step 3
Mix eggs with sugar. :-Do not over beat.
Step 4
Heat 2 tsps of ghee in a saucepan.
Step 5
Add the egg mixture. give it a good stir till it reaches a scrambled egg consistency. take it off the heat.
Step 6
Add cashewnuts, raisins and cardamom powder.
Step 7
Oil your hands with a little melted ghee.
Step 8
Get small balls (the size of a lime) of the ground banana. Flatten it on your palm to small disc shapes.
Step 9
Put 2 tsps of scrambled egg mixture in it.
Step 10
Fold edges and press lightly. Now roll it in your hands and shape it as desired.
Step 11
Heat the oil in a frying pan and fry the balls to a golden brown colour.
Tip
Taste as you go. Recipes are guidelines — your palate is the final judge. Adjust salt, sourness, and heat to what tastes right to you.
