Unnakaaya (Step By Step Photos)
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 5 servings
- 1 Kg, Banana
- Raisins, to taste
- 1, grated Coconut
- 2-4 tbsp Sugar
- 2-3 Cardamom
- Ghee, to taste
- Oil to fry
Preparation
Step 1
Steam cook the bananas.
Step 2
Peel and grind it finely. Set aside.
Step 3
Heat ghee in a pan and cook raisins,coconut and sugar in it till the coconut turns lightly browned.
Step 4
Add cardamom and take it from flame.
Step 5
Now take a lemon sized ball from the grinded bananas.
Step 6
Press it finely on your hand, or a flat, clean and greased surface.
Step 7
Get a spoon full of the coconut mixture and place it on the pressed banana.
Step 8
Fold it slowly in your hands and shape it well.
Step 9
Repeat the same for the remaining banana and coconut.
Step 10
Set a kadai over medium heat and pour in the oil and fry the unnakayas in it till brown in colour.
Step 11
Serve it as an evening snack or during breaking fast.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
