Dates Neyyappam | Healthy Snack
Lacy edges, spongy centre — appam is fermented rice batter swirled in a curved pan until it forms a bowl-shaped pancake. The slight tang from fermentation pairs perfectly with a coconut stew or egg curry.
Ingredientsfor 4 servings
- 1 cup Rice flour podi (Pachari)
- 1/4 cup Dates syrup You can grind dates
- 1/4 cup Jaggery Melt it in 2-3 tbsp water and strain it
- Salt
- 1/4 tsp Cardamom powder
- Oil — for frying
- 2 tbsp Coconut — grated
Preparation
Step 1
In a roomy mixing bowl, and add rice flour into it.
Step 2
Pour dates syrup and melted jaggery.
Step 3
Stir everything together thoroughly. The consistency should be loose than idli batter. Add more water if you want to get the exact consistency level.
Step 4
Add salt, cardamom powder, ghee and grated coconut. Mix it and check the taste. Keep the batter for 4 hours.
Step 5
Get out the batter and pour 1 small ladle of batter into medium hot oil and fry till golden brown. Fry it in medium flame.
Step 6
Dates Neyyappam.
Tip
The swirling motion takes practice. Your first two appams will likely be imperfect — consider them warm-up rounds.
