Ulli Theeyal Olathu
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 6 servings
- Spring onion (ulli theeyal) : 250 gm
- Onion : 50 gm
- Green chilly : 2 nos
- Mustard : 1 tsp
- Curry leaves :1 spring
- Chilly powder : 1 tsp
- Salt, to taste
- Oil : 1 tsp
Preparation
Step 1
Heat a pan and add oil in it, when it gets hot add mustard.
Step 2
When the mustard allow to crackles add the onion, green chilly and curry leaves in to it.
Step 3
When it gets brown add the spring onion in to it and give it a good stir.
Step 4
Add little water and 1 tsp chilly powder and salt to it.
Step 5
Then close it and wait for 5 minutes.
Step 6
It will take only total 10 to 15 minutes for this olathu and it’s a nice combination with rice.
Step 7
Transfer to the serving dish.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
