Ulli Moru
A simple side dish that rounds out any Kerala meal. Quick to make, easy to pair, and the kind of thing that quietly makes rice and curry taste complete.
Ingredientsfor 4 servings
- 1 cup Coconut — grated
- 2 cup Butter milk
- 1/2 cup Cooked rice
- 10 nos. Shallots
- 2 nos. Green chilly
- Curry leaves, a few
- As required Salt
Preparation
Step 1
Grind the grated coconut and cooked rice by adding little water for 30 seconds.
Step 2
Stir in 5 shallots and grind it. No need to make it as a fine smooth paste.
Step 3
Add chopped shallots, green chill, curry leaves, ground rice paste and required salt into the buttermilk. Stir everything together thoroughly, if it is too thick, adjust the consistency by adding 1/4 to 1/2 cup of water.
Step 4
Ulli Moru is ready. Serve it along with rice.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
