Tyre Pathiri/Thick Flat Bread
Tyre pathiri is a Thick flat bread prepared with rice flour.It is almost an inch thick ,Tyre pathiri is traditionally cooked in a clay pan over a wood burning stove,here i prepare tyre pathiri is way.But you can prepare it in gas stove al.
Ingredientsfor 4 servings
- 500 g Rice flour
- Water, to taste
- Salt, to taste
Preparation
Step 1
Mix rice flour with salt and water to make a dough.
Step 2
Make a big ball of the rice dough,place it on a banana leaf.Now gently press it to make a round shape,the pathiri is 1 inch thick and 4 inch diameter.
Step 3
Place another banana leaf on top of the pathiri.
Step 4
Heat a mud pan and place it on along with the banana leaf.as the banana leaf starts to brown turn it over cook on the other side.do it frequently.
Step 5
When both sides are cooked place the pathiri directly on the pan let it become crisp on both sides.Hold the pathiri upright with 2 wooden spatulas turn it like a tyre to cook the sides.
Step 6
Serve it hot with kerala style Naadan Chicken curry.
Tip
Resting the dough is not optional — it relaxes the gluten and makes the dough easier to roll. At least 30 minutes, ideally longer.
