Traditional Kerala Style Mambhazha Koottan
One of the favourites during summer when plenty of ripe mangoes a delicasy for lunch.
Ingredientsfor 4 servings
- 4 Ripe mangoes
- Water : 3 cups
- 1 tsp Turmeric powder
- 1 tsp Chilli powder
- 1 cup Coconut — grated
- Salt, to taste
- 1 cup Curd
- 1 tsp Cumin seeds
- 1 tsp Mustard
- 1/2 tsp Fenu greek
- 2 Red chilly
- 5 Curry leaf
Preparation
Step 1
First wash and peel the mangoes.Cut into large pieces.
Step 2
Heat water in a vessel and add cut mangoes,turmeric powder and salt.Let it Let it cook for 5 minutes in a stove.
Step 3
In the mean time blend grated coconut,cuminseeds,mustard, curry leaf and curd in a mixer.
Step 4
Add this to the cooked mangoes.
Step 5
Then mix all together and let it bubble for 2 minutes,now mambhazha koottan is ready to serve with steamed white rice.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
