Toasted Mushroom
Mushroom, spring onion and other ingredients are fried in butter.
Ingredientsfor 4 servings
- 500 g Mushroom — chopped
- 2 nos Capsicum — chopped
- 4 nos Spring onion — chopped
- 4 tbsp Butter
- 3 nos Garlic cloves
- Ajinomoto A pinch
- 1 cup Carrot — diced
- 3 nos Red chillies
- 1 tbsp Vinegar
- Pepper, to taste
- Salt, to taste
Preparation
Step 1
Set a kadai on the stove, pour vinegar and 1/2 cup water. Add red chillies and garlic. Bring to let it bubble for 5 minutes.
Step 2
Grind the chillies and garlic into fine paste.
Step 3
In a wok, heat butter and cook capsicum, carrot, spring onion. Season with salt and pepper. Set aside.
Step 4
Melt remaining butter in a pan and add finely chopped mushrooms. Fry till golden brown.
Step 5
Add the cooked capsicum and spring onion into the mushroom and cook till dry. Add the ground paste, ajinomoto and toast well.

Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
