Tea Cake
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 4 servings
- 250 g Allpurpose flour Maida
- 4 nos Eggs
- 150 g Sugar
- 1 tsp Cake jeera
- 1 tbsp Lime juice
- 50 g Butter
- 1 tbsp Vegitable oil
- 3 - Vanilla essence
- 1 tbsp Baking powder
Preparation
Step 1
Mix together maida and baking powder and set aside.
Step 2
Separate egg white and yolk.
Step 3
Mix together the butter and powdered sugar.
Step 4
Add the blended egg white into it.
Step 5
Add egg yolk and vanilla essence into it.
Step 6
Stir everything together thoroughly with a blender.
Step 7
Add oil and jeera into it.
Step 8
Add the maida mixture and blend it, till the mix become fluffy.
Step 9
Pour the mix into a cake tin.
Step 10
Bake it for about 35 minutes in 350 Degree F.
Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
