Tasty Masala Dosa
Crispy on the edges, soft in the middle — this tasty masala dosa is a breakfast staple across Kerala. The batter comes together quickly and the dosa cooks in under a minute on a hot tawa.
Ingredientsfor 6 servings
- 2 cup Raw rice
- 1 cup Urad dhal parippu (Uzhunnu)
- 1/4 cup Cooked rice
- Fenugreek A pinch (Uluva)
- Salt, to taste
- 3 nos Potatoes
- 2 nos Onion
- 3 nos Green chillies
- 2 nos Dry red chillies
- Curry leaves, a few
- Ginger garlic paste - 1 tsp
- 3 nos Shallots (Kunjulli)
- Mustard seeds, a few
- Oil, to taste
Preparation
Step 1
For preparing Masala dosa, first soak raw rice, urad dhal and fenugreek seeds for few hours.
Step 2
Grind all these together and make a smooth batter.
Step 3
Grind the cooked rice and then add to the batter and keep it for 6-8 hours.
Step 4
Cook potatoes and onion well with enough salt.
Step 5
Let the mustard seeds crackle in oil, add dry red chillies, shallots and fry for 2 minutes. Add green chillies, ginger-garlic paste and curry leaves. Stir continuously.
Step 6
Add the cooked potatoes to it and mix masala well.
Step 7
Make the dosa in a tawa, put some masala into each dosa and roll it.
Step 8
Masala dosa is ready.
Tip
The pan must be properly hot before you pour the batter. Sprinkle a few drops of water — if they sizzle and evaporate immediately, the temperature is right.
