Tasty Broccoli Egg Stir Fry
Pan-fried until the edges go dark and crispy, this egg fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 4 servings
- Broccoli, as needed — finely chopped
- Shallots — sliced (Kunjulli)
- Curry leaves, a few
- Green chillies — sliced
- 2 nos Eggs beaten
- Salt, to taste
- Pepper, to taste
- Mustard seeds, a few
- Oil/butter, to taste
Preparation
Step 1
Heat butter in a shallow pan.
Step 2
Let the mustard seeds crackle.
Step 3
Add onions, green chillies, curry leaves and cook for a while.
Step 4
Add broccoli and cook for a min.
Step 5
Put the lid on and cook until crisp. Do not overcook.
Step 6
Add beaten eggs and stir nicely to make scramble. Fry for sometime.
Step 7
Add salt and pepper and a little dab of butter and stir fry. Serve hot.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
