Tans Special Chicken Curry

Ingredientsfor 4 servings
- 1/2 kg Chicken
- 2 nos Onions
- 5 Cloves Garlic — finely chopped
- 1 tbsp Ginger — chopped
- 3 nos Green chillies
- Fenugreek seeds A pinch (Uluva)
- 1/2 tsp Mustard seeds
- 4 small Cinnamon (Karugapatta)
- 4 nos Cardamom (Elakka)
- 4 nos Cloves (Grambu)
- 2 Springs Curry leaves
- 2 nos Red chillies
- 2 nos Tomato — chopped
- 1 tsp Chilly powder
- 1/4 tsp Turmeric powder
- 11/4 tsp Coriander powder
- 1 tsp Chicken masala powder
- 1/2 tsp Garam masala
- 1/2 cup Tamarind water made with a very small piece of tamarind — soaked in water
- 1 tsp Tomato sauce
- Oil, to taste
- Water, to taste
- Salt, to taste
Preparation
Step 1
For preparing tans special chicken curry, wash the chicken pieces properly and set aside.
Step 2
Set a pan over medium heat and pour in the oil, cook onions, garlic, ginger, green chillies and salt until the onions become lightly browned. take it off the heat and allow it to cool.
Step 3
Grind the above into a fine paste with fenugreek seeds and mustard paste. Keep this fenugreek mixture aside.
Step 4
Meanwhile cut the tomatoes and cook it, stirring in a pan with little water. Grind it to make a fine puree.
Step 5
Heat the oil in a vessel and sautT cinnamon, cardamom and cloves.
Step 6
Next, add split red chillies and curry leaves. Allow it to allow to crackle on low heat.
Step 7
Next, add in the fenugreek paste and cook it, stirring for 5 minutes on medium heat.
Step 8
Pour in the tomato puree and Let it cook for 2 minutes.
Step 9
Drop in chilly powder, turmeric powder and coriander powder. cook it, stirring for 5 minutes.
Step 10
Stir in in the chicken masala powder and garam masala. cook for another 2 minutes.
Step 11
When the gravy begins to simmer, pour in the tamarind water, chicken pieces and 1/2 cup of water. Allow it to cook with a closed lid for 10 minutes.
Step 12
Pour tomato sauce to the chicken curry and Stir everything together thoroughly.
Step 13
Garnish with coriander leaves and take it off the heat.
Step 14
Tans special chicken curry is ready. Serve hot.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
