Sweet Palaada
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 6 servings
- 2 cup All purpose flour Maida
- 4 cup Coconut Milk thick
- 4 nos Beaten Eggs
- 2 tsp Sugar — powdered
- 1/2 tsp Sesame seeds
- 1/2 tsp Cumin seeds
- 1/4 tsp Salt
Preparation
Step 1
Get a vessel and mix the flour, coconut milk, eggs, sugar & salt. Beat clearly like a dosa batter & then add sesame seeds & cumin seeds.
Step 2
Heat the pan & pour 1 scoop of batter & round it thin.
Step 3
Once it becomes slightly dry, add 1 tsp of sugar & ghee in the middle & spread a bit.
Step 4
When you find the sugar is melting, fold it slowly in a triangle.
Step 5
Like this u can make upto 15 palaada`s.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
