Sweet Cutlet
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 4 servings
- 1 cup Wheat flour
- 2 tbsp All purpose flour Maida
- 50 g Jaggery Sharkara
- 3 nos Banana Cheru pazham
- Oil, to taste
- Salt A pinch
Preparation
Step 1
Make a dough with wheat flour, maida, jaggery and cheru pazham without adding water. 2)When the batter is ready, put some batter in hand and prepare oval shaped cutlets. Repeat the same with remaining batter.
Step 2
Heat some oil in a pan. fry in hot oil the cutlets till golden brown. Serve hot.
Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
